Picked our first carrot of the season this afternoon. Last year the carrots weren’t very big at all, this year they did it though!
Also, for lunch for the past few days we have been going up to the garden picking vegetables and then eating them with some egg noodle pasta… MMMMM!
Lots of fresh sugar snap peas to be found right now..
This is so good. I made this last night and it was so good we’re going to have it again tonight in burrito form!
I never made home made salsa before, but it was so easy I’ll be doing it from now on..
What you need: Canned tomatoes (diced/whole/chopped), mined garlic, cilantro, pepper, green peppers. You can also add onions and green chilies to this.
Is there anything better than picking your cilantro just a few minutes before cooking? So good.
Put everything into your food processor or blender and mix.
Here’s the ingredients for the casserole plus some that are missing. You will need: ground or shredded chicken, black beans, corn, taco seasoning, salsa (that you just made!), cheese and tortilla chips.
What you will do is most likely eat about 10 chips with this salsa while putting this together. Then your other half will come into the kitchen and eat 10 more chips, and then you will think.. I should have made more salsa!
Mix all these ingredients together, put the cheese and broken up tortilla chips on top.
Bake at 350 for about 20 minutes. Add more cheese on top, bake 5 more minutes.
Serve, eat, love!
