Have a great big tomato harvest? Are you running out of ideas/time with what to do with all your tomatoes? Breathe. It’s going to be ok. Besides tomato sauces, you can freeze whole tomatoes! That’s right. Just clean the tomato, put on a cookie sheet and put in the freezer. Once it’s frozen, package them all up in a freezer bag. In my freezer I have bags of tomatoes. This week I pulled out some tomatoes from our July harvest and made some salsa. Figures, Matthew said it was the best salsa all year!
When you get them out of the freezer, they’ll be frozen, but not frozen together.
Then you’ll just place them in some warm water for a few minutes. They’ll defrost super quick and basically blanche themselves (or you can keep the skin if you wan, I usually do!).
