Seriously, if a recipe consists of potatoes and bacon, then you know it’s going to change your life. This is a super filling soup. Afterwards I had to squeeze into a bodysuit and skirt, yikes.
Please make this. You won’t regret it. This is one of those meals where you impress yourself.
3 pieces of turkey bacon (listen, turkey bacon is delicious, save the calories and get this)
1 clove garlic
4 tablespoons flour
1 teaspoon sea salt
1 teaspoon dried basil
1/2 teaspoon black pepper
3 1/4 cups low sodium chicken broth
1 cup half and half cream
2-3 large baked potatoes
1/2 teaspoon hot chili or pepper sauce
fresh parsley on top

Bake your potatoes. Once they’re done, cut them up into cubes (hot potato!) – set potatoes aside. In a skillet, make your turkey bacon. Set aside the bacon. Saute garlic in this same skillet. Stir in flour, salt, basil, pepper and keep mixing. Add your broth and bring to a boil for a few minutes. Add your potatoes, half and half, hot sauce. Heat on about low/medium heat until everything is heated (dont boil). Put fresh parsley and bacon on top.
This will take about 20-30 minutes total so it’s a quick meal. This will do about 2-4 servings, in our case it was 2 servings as the soup was our full meal.
Let’s just talk about how good bacon is. And turkey bacon. I used to get the regular high calorie fatty bacon until a recipe called for turkey bacon a few months back. I bought it and fell in love. It’s just as good, maybe even better. No, I’m not lying. Try it!
