So today’s recipe is fresh bean salad. This is on the list of “prettiest recipes ever”. It’s also on the list of “wow that’s alot of ingredients”. It’s also on the list of “this is quick to make but it takes me 10 minutes to collect all the ingredients”. It’s on alot of lists, ok?
I started with this recipe here but tweaked alot of the measurements and some ingredients.
15 oz black beans
15 oz kidney beans
15 oz cannellini beans
1 green bell pepper – garden picked!
1 red bell pepper – not garden picked because i eat the green ones too quick
1 package corn kernels – i used a 16 oz bag
1/2 cup olive oil
2 tablespoons lime juice
1 tablespoon lemon juice
1 tablespoon white sugar
1 tablespoon sea salt
1 clove garlic – mince it
1/2 cup fresh cilantro – cut it up
1/2 tablespoon cumin
1/2 tablespoon black pepper
1 little squirt of chili sauce
1/2 teaspoon chili powder
Easy Directions: Rinse and drain your beans. Combine beans, peppers, frozen corn in one bowl. In another bowl mix together all other ingredients. Pour olive oil mixture on top of bean mixture. Put in the refrigerator if you want it chilly when eating, but I prefer it warm so I will keep it the refrigerator and then I will heat it in the microwave for 2 minutes before eating.

There are some things here to talk about. I didn’t use the sherry wine vinegar (discussed below). Also not pictured because I forgot it in the picture, sugar.
Lovely peppers and cilantro and little garlic boy too. The green pepper to the right is just a half of one that I had in the fridge and wanted to use it up.
I food processed the peppers because I’ve lost my mind and will process everything now.
Mix the beans, peppers, corn together. This is pretty before it even begins!
Look at how pretty the dressing is… Looks like some type of fancy potpourri. Pour this over the beans and mix up.
Let me tell you another story. In the original picture of ingredients I had sherry wine vinegar. You see, I bought this for a recipe knowing very well it was going to gross me out. I can’t stand the smell of vinegar, it makes me sick. I forget what I used it for, I think it was a stew or maybe it was for a marinade, I forget, but I couldn’t eat dinner, I would gag everytime I smelled it in the food. I’m over dramatic. I didn’t eat dinner or I held my nose. So I thought I would try this again. I made the olive oil mixture with the sherry wine vinegar and I smelled the vinegar and thought “this is a horrible choice, but suck it up Pamela!”. So I went and kept adding all the ingredients. I got the to the end and whisked together the olive oil mixture with the wine vinegar and couldn’t get the smell out of my head. I stood in the kitchen for 5 minutes contemplating to throw it away and start again or just eat it. After a few more smells I decided I would like to enjoy dinner so I dumped this and threw it away. Yes, I wasted 1/2 cup olive oil in the process, but I saved myself from not enjoying dinner! I’m weird about smells. The smell of the sherry wine vinegar could still be found on the whisk so I had to wash that 5x and I could still smell it. Eventually I just soaked it and got another one out of the drawer. I have issues.
Now clean up. Compost bin is always on my counter (top left) so I can put right in the box.
