Chicken Tortilla Soup

I love Tortilla Soup.  Whenever we order Mexican this is a must.  So to my surprise and excitement, I made this and it’s actually better then the restaurants.  I’m not lying.  It’s really good.  I didn’t think Matthew was going to be into it, with avocados and all, but we both had seconds (maybe thirds too). 

Full recipe here.  I followed this pretty exactly but I didn’t use green onions and I used a little more (by a few ounces) of chicken broth.  I also used the whole can of white hominy (first time using it in a recipe!).  Oh and I didn’t have any fresh cilantro so I used cilantro cubes instead which melted quick in the pot.

All the beans, corn and peppers ready to go.  This was our first time knowingly eating white hominy.  Personally, I think it tastes like if corn and potato had a baby.  I like it.

Make sure to cut up some avocados for on top.  Cheese and crushed tortilla chips too! :)
