Neon Dinner Food

For the Neon Dinner Party I was under the impression that everything had to be neon.  To the shirts and socks you wore, to the food you brought.  Especially the food. Well, I’m pretty sure I’m the only one who dyed any food, but it was worth it.  At first I thought I would go the mashed potatoes route, or baked goods, but the host has a no dairy policy, so then fear spread in and I began googling foods to add food coloring to.    Hot pink neon cilantro and lime rice? Yes please! Stuffed Pepper casserole with neon blue rice? Yes! 
I added about 3 small drops of food coloring to the rice in the very beginning before I added in water to boil and simmer.  Once I added in the water, it really soaked up the food coloring and made the rice super intense.
I would do this again, just for fun.  :)
