I can’t take credit for this – this was al Matthew.
We got some real nice chicken breasts a few days ago from the store – so we marinated them with Italian vinaigrette overnight.
Then Matthew pan fried up a chicken breast tonight – they came out delicious – they were very light, melt in your mouth – but yet crispy on the edges – and with a delicious taste of the marinade.
With it he fried up some of our garden vegetables and then let simmer – I’ll be honest, these were amazing. I would have a plate full of sugar snap peas, carrots, red potatoes and broccoli anytime!
For dessert? A refreshing lime popsicle… a great dinner indeed!
