I love prosciutto – it’s up on there on the “cant live without” lists of food. I can eat it many ways – by itself (happily), on some pizza, on a sandwich, wrapped around vegetables, etc.
This is a quick and delicious lunch, plus it tricks you into eating some healthy greens.
Grab a nice piece of bread or half of a roll, put a bed of fresh arugula on it, add a few hearty drops of ricotta, pour half a cap full of olive oil on top, add 2 thin slices of prosciutto on top. ENJOY!
